Creamy Pasta with Falukorv

Ready in 20 minutes with almost no cleanup. Falukorv and carbonara sauce — the kind of weeknight dinner the whole family actually finishes.

Instructions

    Slice the falukorv into half-rounds and cut the red onion into half-rings. Fry them together in a pan with the margarine until nicely golden.

    Cook the pasta according to the package instructions, then drain the water.

    Make the carbonara sauce according to the packet instructions.

    Stir the sauce into the drained pasta, then top with the fried falukorv and onion.

Tips from the kitchen

  • Give the falukorv room in the pan. Crowd it and it steams instead of browning, so use a wide pan and let the half-rounds sit a minute before stirring.
  • Start the pasta water before you slice anything. The sauce mix and the frying both go fast, so the pasta is usually the slowest part.
  • Keep about half a cup of pasta water before you drain. If the carbonara sauce ends up thick, a splash loosens it back up.
  • Cook the onion a touch longer than the falukorv if you want it soft and a little sweet. The sausage browns quicker than the onion goes golden.
  • Stir the sauce into the hot pasta right away while it's still steaming. It clings better than if the pasta has cooled and stiffened.

Ways to vary it

  • Swap the red onion for leek if you want something milder. Slice it thin and it softens fast in the margarine.
  • A handful of frozen peas stirred into the pasta at the end is an easy way to get some green in. Optional, but the kids tend not to notice.
  • If you like a bit of bite, add some sliced bell pepper to the pan with the falukorv.

Storage & leftovers

Keeps in the fridge for up to 3 days in a sealed container. The cream sauce can split a little when frozen, so I'd skip the freezer with this one. Reheat gently in a pan or microwave with a splash of milk or water to bring the sauce back together.

What to serve with it

A simple green salad on the side is all it needs. Some crusty bread is nice too if you want to mop up the sauce.
