Bread Stick Churros

Great way to use up stale bread — crispy, buttery sticks rolled in cinnamon sugar. Ready in under 20 minutes.

Instructions

    Cut the bread into sticks.

    Melt the butter, then toss the bread sticks in it until well coated.

    Lay them out on a baking tray lined with baking paper, then sprinkle the sugar and cinnamon over the top.

Tips from the kitchen

  • Staler bread is your friend here. Fresh slices go soggy in the butter and won't crisp up, so older bread that's a bit dry holds its shape and gets crunchy.
  • Cut the sticks roughly the same thickness so they bake evenly. Thin ones will burn while fat ones are still soft in the middle.
  • Toss the sticks in the melted butter while it's still warm, not hot. They soak it up better and you get even coating instead of greasy patches.
  • Mix the cinnamon and sugar together in a little bowl before sprinkling, otherwise you get clumps of cinnamon in some spots and bare sugar in others.
  • Watch them around the 8 minute mark. They go from golden to too dark fast, and the edges crisp before the centers do.

Ways to vary it

  • Swap the cinnamon for a pinch of cardamom if you want a different warm spice. Good with the same sugar.
  • A small dusting of cocoa powder mixed into the sugar gives them a chocolatey edge. Optional, but nice.
  • Brioche or leftover hot dog buns work in place of plain bread if that's what you've got going stale.

Storage & leftovers

These keep about 2 days in an airtight container at room temperature, though they soften as they sit. They don't freeze well since the texture turns chewy. To bring back the crunch, pop them in a 160 °C oven for a few minutes rather than the microwave, which makes them limp.

What to serve with it

A cup of strong coffee or hot chocolate on the side. A small dish of melted chocolate or jam for dipping turns them into more of a treat.
