Norwegian Waffles

Classic Norwegian waffles that never fail to please. Set out jam, sour cream, butter, sugar and brown cheese - everyone gets what they want.

Instructions

    Mix flour, sugar, baking powder and cardamom in a bowl.

    Add milk gradually, stirring well between each addition to get a smooth batter without lumps.

    Stir in eggs and add melted butter. Let the batter rest for 30 minutes. Adjust with a little water or milk if too thick.

Tips from the kitchen

  • Don't skip the 30 minute rest. It lets the flour soak up the milk and the cardamom bloom, so the batter cooks more evenly and the waffles hold together.
  • Add the milk a little at a time and stir between each pour. That's how you keep the batter smooth instead of fighting lumps later.
  • The melted butter goes in last, and let it cool a touch first so it doesn't start cooking the eggs when you stir it in.

These keep in the fridge for about 3 days in an airtight container. They freeze well too, just separate them with a bit of parchment so they don't stick. Reheat in a toaster or a warm waffle iron to get the edges crisp again, since the microwave leaves them rubbery.
