Whisk the eggs and sugar into a thick, stiff foam. Finely crush the rusks, then gently fold them into the egg mixture.
Pour the batter into a greased 1.5-litre loaf tin. Place it on the lowest rack in the oven at 160 °C and bake for about 30 minutes.
Serve with apple sauce and whipped cream spooned over the top. The cake is best served slightly warm.

Keeps in the fridge for about 3 days, covered. It freezes fine wrapped tight, up to a month, though the texture goes a touch softer once thawed. Warm slices in a low oven or for a few seconds in the microwave, then add the cream and apple sauce fresh.
