Tips from the kitchen

  • Spread the cream cheese all the way to the edges of both slices. It acts like a seal so the lettuce and pepper don't slide around in your bag.
  • Put the cheese slices right against the cream cheese and tuck the lettuce on the outside layer. Keeps the bread from going soggy by lunchtime.
  • Pat the snack pepper slices dry before they go in. They carry a bit of moisture that ends up in the bread otherwise.
  • Press the sandwich down gently with your palm, then cut it. A loose stack falls apart the second you pick it up.

Ways to vary it

  • Swap the herb cream cheese for plain cream cheese and add a thin smear of mustard if you want a sharper bite.
  • Trade the white cheese for a slice of gouda or jarlsberg, whatever you have in the drawer.
  • Add a few thin cucumber slices alongside the pepper for extra crunch.

Storage & leftovers

Wrapped tight, it holds in the fridge for about a day, which is what makes it good for packing the night before. It doesn't freeze well, the lettuce and pepper turn limp and wet. Eat it cold, no reheating needed.

What to serve with it

An apple or a handful of grapes on the side rounds out the lunchbox. A small bottle of water or some carrot sticks work too.
