Wholegrain Toast with Cheese and Ham

Crispy grilled bread, melted cheese, ham, and a little mustard — done in under 20 minutes. Great on the grill too.

Instructions

    Spread butter and mustard on one side of each bread slice, then layer on the ham and cheese. Place a second slice on top to close the sandwich.

Tips from the kitchen

  • Butter the outside of the bread too, not just where the mustard goes. That outer layer is what gives you the crisp crust when it hits the pan.
  • Keep the heat at medium. Too hot and the bread browns before the cheese has a chance to melt, and you end up with a toasted outside and a cold middle.
  • Press the sandwich down gently with a spatula while it cooks. It helps the cheese melt against the ham and keeps everything from sliding apart.
  • Go easy on the mustard. A thin smear is enough, since a tablespoon split across four sandwiches goes further than you think.
  • You know it's done when the cheese starts oozing out the sides and the bread is golden. Flip once, not five times.

Ways to vary it

  • Add a few slices of tomato before you close the sandwich if you want something fresher. Pat them dry first so they don't make the bread soggy.
  • Swap the white cheese for a sharper one like aged cheddar if you like a stronger bite.
  • A handful of baby spinach tucked in with the ham works nicely and you barely notice the extra greens.

Storage & leftovers

These are best eaten right off the pan, but they'll keep in the fridge for up to two days wrapped in foil. Don't freeze them, the bread goes soft and the cheese turns rubbery. Reheat in a dry pan over low heat so the crust crisps back up instead of going chewy in the microwave.

What to serve with it

A handful of crisps or a simple green salad on the side is all you need. A bowl of tomato soup turns it into a proper lunch.
