
Pumpkin Soup with Eggs

Surprisingly good weeknight soup — creamy spinach with a soft-boiled egg on top. Ready in under 40 minutes from mostly freezer and pantry staples.
Boil the eggs for 8–10 minutes, then cool them in cold water and peel.
Chop the onion and add it to a hot pot with the olive oil along with the thawed spinach. Let it sizzle for a couple of minutes.
Add the water, bouillon cubes, and leek. Let it simmer for about 5 minutes.
Stir in the crème fraîche, then blend the soup smooth with a stick blender or in a regular blender. Season with salt and pepper. Serve with the boiled eggs.

The soup keeps in the fridge for up to 3 days. Store the eggs separately or they'll get rubbery sitting in the liquid. It freezes fine without the eggs, just reheat gently on the stovetop and stir in a spoonful of crème fraîche if it looks a bit thin after thawing.
A thick slice of crusty bread is all you need. Sourdough or a good rye both hold up well to dipping.
