Tips from the kitchen

  • Cook times depend on egg size. These work for large eggs straight from the fridge. If yours are colder or bigger, add a minute and check.
  • Drop the eggs into a bowl of cold water the second they come out. Stops the cooking and makes the shells peel off cleaner.
  • Air fryers run hot or cold depending on the model. Do one test egg at 9 minutes first, crack it open, and adjust from there before you commit all four.
  • Don't crowd them. Lay the eggs in a single layer so the air moves around each one, otherwise the cook gets uneven.
  • For the jammy 9 minute version, peel under running water. The softer yolk holds together better when the shell comes off wet.

Ways to vary it

  • Once peeled, halve the hard-boiled ones and add a spoon of mayo and a pinch of curry powder for a quick egg salad.
  • Soft-boiled at 7 minutes goes nicely sliced over toast with a little salt and cracked pepper.
  • If you like them marinated, soak the peeled 9 minute eggs in soy sauce and a splash of water for a few hours in the fridge.

Storage & leftovers

Keep them in the shell in the fridge and they'll hold for about a week. Peeled eggs are best eaten within two days. Don't freeze boiled eggs, the whites turn rubbery and weep water when they thaw. To warm one up, sit it in hot water for a couple of minutes rather than microwaving, which can make it pop.

What to serve with it

Good with buttered toast soldiers for the soft ones, or chopped into a green salad for the hard-boiled. A bit of flaky salt on top goes a long way.
