
Sausage Gratin with Potatoes
Classic Norwegian comfort food that the whole family goes for. Uses leftover boiled potatoes, which makes it come together really fast.

Norwegian take on Shepherd's Pie — hearty meat sauce topped with creamy mash and melted cheese. A proper weeknight dinner the whole family will eat.
Peel the potatoes and cut them into rough chunks. Boil in a pot of water until tender, then drain. Mash them and stir in the milk and butter. Season with salt, pepper, and a little nutmeg if you like.
Fry the minced pork in two batches in a pan with margarine or oil. Set the meat aside, then fry the onion and carrot in the same pan until golden.
Add the tomato paste and fry for another couple of minutes, stirring it in. Now add the canned tomatoes, the browned mince, and the corn. Mix it all together and season to taste.
Pour the meat sauce into a deep ovenproof dish — or divide it between individual portion dishes. Spread the mashed potato over the top like a lid, then scatter the grated cheese over everything.
Put the dish in the oven at 180 °C and bake for 30–40 minutes, until the cheese has melted and the top is nicely golden.

Keeps well in the fridge for up to three days, covered. It freezes fine too, best done before baking. Reheat in the oven at 180 °C for 20-25 minutes rather than the microwave, which turns the mash gluey.
A simple green salad on the side is enough. Some crusty bread if you want to mop up the sauce.
