Tray Bake with Pork Sausage

Weeknight dinner sorted in under 40 minutes — all the cozy Christmas flavours without the fuss. One pan, done.

Instructions

    Cut the red cabbage into chunks, slice the apples, and halve the shallots lengthways.

    Toss the red cabbage, apple, shallots, and baby potatoes into an ovenproof dish and drizzle over the olive oil, then season with salt and pepper.

    Put the dish in the middle of a preheated oven at 200 °C for 10 minutes.

    Cut the pork sausage into pieces and add them to the dish. Roast for another 10 minutes until the vegetables are tender and the sausage is cooked through.

    Bring the dish straight to the table and scatter over the roughly chopped flat-leaf parsley before serving.

Tips from the kitchen

  • Cut the baby potatoes in half if any are bigger than a walnut, otherwise they won't be tender in 20 minutes while the cabbage softens.
  • Give the potatoes and shallots their full 10 minutes alone before the sausage goes in. They take longer than the sausage, and adding everything at once leaves you with raw potato.
  • Slice the apples a bit thicker than you think. Thin slices turn to mush in the heat, and you want them to hold their shape next to the cabbage.
  • Check the sausage by cutting into one of the bigger pieces. No pink in the middle and the juices run clear, then it's done.
  • Spread everything in one layer in the dish. Pile it up and the cabbage steams instead of catching colour at the edges.

Ways to vary it

  • Swap the pork sausage for a smoked one if you like a deeper flavour with the cabbage and apple.
  • A handful of chestnuts tossed in with the vegetables works nicely if you want to lean into the Christmas side of things.
  • If you have rosemary or thyme around, tuck a few sprigs in before roasting and pull them out at the end.

Storage & leftovers

Keeps in the fridge for up to 3 days in a sealed container. It doesn't freeze well since the potatoes and apple go soft and watery once thawed. Reheat in a hot oven or a pan rather than the microwave so the sausage doesn't go rubbery and the vegetables crisp back up a little.

What to serve with it

A spoonful of mustard on the side does a lot here, and some crusty bread to mop up the juices. A glass of cider if you're in the mood.
