Classic Banana Bread

Perfect way to use up those overripe bananas sitting on your counter. Moist, tender, and ridiculously easy — just one bowl and no mixer needed.

Instructions

    Heat your oven to 175°C and grease a 23x13cm loaf pan.

    Mash the bananas in a large mixing bowl until mostly smooth — a few lumps are totally fine.

    Mix the melted butter into the mashed bananas.

    Add the sugar, egg, vanilla, baking soda, and salt, stirring until just combined.

    Fold in the flour until you can't see any dry streaks, but don't overmix.

    Pour the batter into your prepared pan and smooth the top.

    Bake for 60-65 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs.

    Let it cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.

Tips from the kitchen

  • The riper the bananas, the better. You want them covered in brown spots, almost black. If yours are still yellow, leave them on the counter a few more days or pop them in a 175°C oven for 15 minutes to soften and sweeten.
  • Let the melted butter cool for a minute before stirring it into the bananas, otherwise it can start cooking the egg when you add it.
  • Stop mixing the second the flour disappears. Overmixing develops the gluten and you end up with a tough, gummy loaf instead of a tender one.
  • Start checking at 60 minutes with a toothpick in the center. A few moist crumbs are what you want. Wet batter means give it more time, and a totally clean pick can mean it's drying out.
  • Don't skip the 10 minute rest in the pan. Turn it out too early and the warm loaf can tear or sink in the middle.

Ways to vary it

  • Fold in a handful of chopped walnuts or pecans with the flour for some crunch.
  • Stir in 75g of dark chocolate chips at the end if you want it more like a treat than breakfast.
  • Swap a teaspoon of the vanilla for a half teaspoon of cinnamon, or add both, for a warmer, spiced flavor.

Storage & leftovers

Wrapped tightly or in an airtight container, it keeps on the counter for 3 to 4 days and stays moist. It freezes well too, either whole or in slices wrapped individually, for up to 3 months. Thaw at room temperature, and a quick 10 seconds in the microwave or a few minutes in a warm oven brings back that fresh feel.

What to serve with it

A thick slice is good warm with a smear of butter melting into it. A cup of coffee or tea on the side and you're set for a slow morning.
