Spiced Fish Burger with Chili Mayo
Crispy spiced pollock in a bun with quick pickled zucchini and a punchy chili mayo. Easy enough for a weeknight, fun enough that the kids will ask for it again.
Crispy homemade fish fingers tucked into a wrap with mango and a quick sour cream dressing — way better than the frozen kind.
Crack the eggs into a bowl and whisk them well. Measure out the flour and panko into two separate bowls.
Cut the fish into thick strips, then coat each piece first in flour, then in egg, and finally in panko.
Heat some butter in a frying pan and fry the fish pieces for a few minutes on each side until golden.
Meanwhile, mix together the sour cream, lemon juice, salt, and pepper to make the dressing.
Cut the mango and cucumber into cubes and slice the lettuce into strips.
Serve the warm fish fingers in wraps with mango, cucumber, lettuce, and the sour cream dressing on top.

The fried fish fingers keep in the fridge for up to 2 days in a sealed container. Reheat them in the oven at 200°C for about 8 minutes to get the crunch back. Don't microwave them, the coating goes soft and sad. Keep the dressing and fillings separate so the wraps don't go soggy.
A simple green salad on the side is all you need. Some oven fries or sweet potato wedges also go well if you want to make it more of a proper dinner.
