Mango and Strawberry Smoothie

Perfect when you skip breakfast — blend it up in two minutes and you're out the door with something actually filling.

    Cut up the fruit and divide it into zip-lock bags.

    Put the bags in the freezer until you're ready to use them.

    Take a bag out of the freezer, pour the liquid into the blender, then add the frozen fruit. Blend until smooth.

Tips from the kitchen

  • Cut the mango and pineapple into small chunks before freezing, not big wedges. Big pieces don't blend as smoothly and can strain a regular home blender.
  • Leave the banana out of the freezer bag and freeze it separately, already peeled. Frozen banana makes the whole thing thicker and creamier without adding anything extra.
  • Pour the apple juice in first, before the frozen fruit. Liquid on the bottom helps the blades catch and you won't end up with a stuck blender and half-blended chunks.
  • The bags are ready to use straight from the freezer, no thawing needed. If the smoothie comes out too thick, just add a splash more apple juice and blend for another 10 seconds.

Ways to vary it

  • Swap the apple juice for coconut water if you have it. It keeps the smoothie light and adds a subtle background flavor that works well with the mango.
  • Add a small handful of spinach to the bag before freezing. You won't taste it at all once it's blended, and it makes the color a bit more interesting for kids who are into that sort of thing.
  • For a thicker, more filling version, add half an avocado when blending. It won't change the flavor much but the texture gets noticeably richer.

Storage & leftovers

This smoothie is best drunk straight away. If you pour leftovers into a jar with a lid, it keeps in the fridge for about 12 hours, but give it a good shake before drinking because it separates. Freezing the blended smoothie doesn't work well, the texture goes grainy when it thaws.

What to serve with it

A slice of toast with peanut butter on the side turns this into a proper breakfast. Good alongside overnight oats too if you're making a bigger spread.
