Practically makes itself while you sleep — creamy oats with coconut and blueberries ready to grab straight from the fridge in the morning.

Instructions

    Put the oats and milk into a glass or container with a lid. Add the coconut flakes and half the blueberries.

    Put the lid on and leave it in the fridge overnight.

  3. 3

    Give it a stir before serving, then add the vanilla kesam or yoghurt. Serve with the remaining blueberries on top.

Tips from the kitchen

  • Use quick-cook rolled oats here, not the big jumbo flakes. They soak up the milk softer and faster overnight.
  • Stir the coconut through before it goes in the fridge so it spreads out instead of clumping at the top.
  • Adding half the frozen blueberries before the fridge is on purpose. They thaw overnight and bleed a bit of color and juice into the oats, while the ones you add in the morning stay whole and cold.
  • If it looks too thick when you stir it in the morning, loosen it with a splash more milk before you spoon in the kesam.
  • Pick a glass or jar with a tight lid. The oats will smell like whatever else is in your fridge if it's left open.

Ways to vary it

  • Swap the vanilla kesam for plain yoghurt if you'd rather have it less sweet, or keep the kesam for the vanilla note.
  • Frozen raspberries or chopped strawberries work in place of the blueberries if that's what you've got.
  • A spoonful of chia seeds stirred in before the fridge thickens it up a little, if you like it firmer.

Storage & leftovers

Keeps in the fridge with the lid on for up to 3 days, so you can make both portions at once and grab one each morning. It's a no-cook breakfast, so there's nothing to reheat. Don't freeze it, the oats turn mushy and the kesam splits when it thaws.

What to serve with it

A mug of coffee or tea is all it really needs. If the kids want more, a piece of fruit on the side rounds it out.
