Noodles with Ground Pork

Quick weeknight wok that the whole family actually eats. Swap in whatever veg you have in the fridge.

Instructions

    Heat the margarine or oil in a frying pan. Wait until the margarine stops foaming, then fry the ground pork in batches, breaking it up into smaller pieces with a spatula as you go.

    Wash, peel, and cut the carrot and celeriac into strips. Break the broccoli into smaller florets. Fry all the vegetables together with the finely chopped garlic and ginger until everything smells fragrant and starts to soften.

    Cook the noodles according to the package instructions.

    Combine the meat, vegetables, and noodles, drizzle over the soy sauce, and serve.

Tips from the kitchen

  • Fry the pork in batches and don't crowd the pan. If you dump all 400g in at once, it steams instead of browns and you lose a lot of the flavor that comes from actual contact with the hot pan.
  • The celeriac takes longer to soften than the carrot or broccoli. Cut it into thinner strips than everything else, or give it a 2-minute head start in the pan before adding the rest.
  • Grate the ginger straight into the pan rather than measuring it out first. Two tablespoons sounds like a lot but it mellows out fast once it hits the heat.
  • Drain the noodles and toss them in immediately while they're still hot. Cold noodles clump and don't absorb the soy sauce the same way.

Ways to vary it

  • Swap the celeriac for half a cabbage, sliced thin. It cooks faster and kids often prefer it. Courgette works too if that's what you have.
  • Add a teaspoon of sesame oil at the very end, off the heat, if you have it. It's not in the base recipe and you don't need it, but it shifts the flavor noticeably.
  • For more heat, a pinch of chili flakes in with the garlic and ginger does the job. The adults can add their own at the table if you'd rather keep it mild for the kids.

Storage & leftovers

Keeps well in the fridge for up to 3 days in a sealed container. The noodles soak up moisture overnight so add a small splash of water when reheating in a pan over medium heat. Freezing works but the noodles go soft, so it's better fresh or from the fridge.

What to serve with it

A simple cucumber salad with a bit of rice vinegar and sesame seeds goes well alongside. Or just put some chili sauce on the table and call it done.
